As for the steaks I only have them when in Belgium (2 or 3 times a year). :D Probably all the Belgian beers that are now available here in Patters are influencing my typing abilities. According to Extreme Cuisine by Jerry Hopkins "The flesh of the horse (Equus caballus) may be substituted for beef in many recipes - the animals are related, after all - as can donkey (Equus asinus) and the mule, a hybrid of the two, both often sold under this title. However as animals that do not have cloven hooves or chew cud, they are prohibited for both Muslims and Jews. Especially in France, Belgium, Sweden, and Japan, it is particularly enjoyed in raw dishes. The raw flank sliced thinly and presented with a hot sauce (horse raddish is not inappropriate) or as "horse tartar" mixed with chopped onions and herbs and spices and served with Worcestorshire sauce. In Japan "umasashi" horse meat sashimi is widely prized. In the south of France, the local sausage is based on ground horse meat, and is grilled, baked or fried. In Italy it is included in a recipe for spaghetti Bolognese. In Switzerland it is deep fried. In North and South America it is made into jerky. Personally I age it a couple of times in France. It is popular in Paris where it is regarded as superior in taste and texture to beef. Lower in calories and fat, higher in usable protein than beef. Recipes: Coat cubes of lean meat with plain flour and fry them in a heavy based pan with onion and shallot until cooked tender. Add a shot of brandy, set to flame just before serving with fresh potato and vegetables Horse tartar 5-8 oz of horse flank or rump per person 1 egg (fresh) 1 tablespoon red onion, chopped 1 garlic clove, minced 1 tablespoon parsley, chopped 1 teaspoon capers Worcestershire sauce or Tobasco, to taste salt and pepper, to taste catsuo, olive oil, soy sauce Grind the meat and form into a ball, working in the raw egg yolk, garlic, worcestershire sauce or tobasco, salt and pepper. Flatten one side so the ball will sit on a plate. Arrange the onion, parsley, and capers on the plate around the meat. Serve with catsup, olive oil, worcestershire sauce and soy sauce in individual dishes for additional flavouring. Veterinary Student's Meatloaf Mix together ground horse meat and ground pork (3:1) with bread soaked in milk (2 slices per lb of meat), some finely chopped onions and chopped celery, beaten egg (1 per 2 lbs of meat), salt, pepper, dry mustard, crushed garlic, and a little worcestershire sauce. Form into a loaf and bake at 350F. After the first half hour, pour off the fat and ladle over the loaf a mixture of canned tomatoes and water (2:1) and some crushed garlic. Sprinkle with grated Parmesan cheese and bake until done. Hope this helps CB (personally I usually just eat the eyes)

I have had Turtle (not an endangered type!) in Gambia, and new potatoes in Ireland! Whale is on the list (I had it in Japan) - I drew a line at eating higher primates such as gorilla and chimpanzee in Africa and Orangutan in Indonesia, but have eaten monkey in Vietnam. Cat and dog also in Vietnam, rat in Laos and mice in Cambodia. Toss in the assorted insects commonly consumed in Thailand and I can be classified as omnivorous. One thing that took me a bit of working up to was the huge tanrantula like spiders in Cambodia. Best thing about them is the can feed a family of eight and everyone gets a leg. CB

Pictures of Frenchmen interacting with horses have troubled us Brits since the advent of the dirty postcard in WW !. However, I find it's really a culinary fiesta, with our devil's own mod yet again cooking and eating defenseless animals. Gawd only knows what he has been up to in the lovely Pattaya, I fear the worst, as a donkey sanctuary has been opened down the coast...............When will it all end ?

Pictures of Frenchmen interacting with horses have troubled us Brits since the advent of the dirty postcard in WW !.However, I find it's really a culinary fiesta, with our devil's own mod yet again cooking and eating defenseless animals. Gawd only knows what he has been up to in the lovely Pattaya, I fear the worst, as a donkey sanctuary has been opened down the coast...............When will it all end ? Probably with him licking his beak. Donkey Burger...... the last word in patties (ged it)
