Got an Iphone but everytime I try to transfer music or movies it wipes the thing clean and adds the stuff I've just transfered, what do I need to do to keep everything.

I think you more or less described how syncing with iTunes works. What you need to do is maintain a library of all your tunes/movies on your Mac/PC and sync this to your iPod/iPhone.

I had an nano before this and I could drag across movies and music onto the nano and still keep all my other sruff on even though it wasn't in the library, thought I might be able to do the same thing but I guess I'll just have to load everything back into Itunes.

It has to be synced, its not like the nano. Make a bunch of playlists in your library in itunes, including a video playlist, then in the iphone sync options tab you tick off the ones that you want to always be on your iphone and they stay there. Until you untick them, you can add new playlists at any time and tick them off to sync too without losing any of your old playlists.
