I hadn't heard of this dish before, but according to various dictionaries, in addition to the literal meaning 'fish kidneys', TAI PLA ไตปลา also has another meaning: 'the hard tissue in the stomach of a fish'.

The Royal Thai Institute dictionary expands further:

ไตปลา น. คําเรียกรวมของอวัยวะในช่องท้องของปลาบาง

ชนิดเช่นปลาทูที่ควักออกมา รวมทั้งส่วนของเหงือก

ปลาด้วย แล้วนําไปหมักเกลือ ใช้ประกอบอาหาร

บางชนิดเช่นแกงเรียกว่า แกงไตปลา; ไตของปลา

ซึ่งเป็นอวัยวะติดกับช่องท้องด้านบนติดกระดูกสันหลัง

ของปลา.

Translation:

TAI PLA ไตปลา (noun): word for the collection of organs in a fish's abdomen of certain fish eg mackerel, including the gills too, which are pickled in salt and used in certain foods eg a curry called GAENG TAI PLA แกงไตปลา; the fish's kidneys which are organs in the top of the abdomen connected to the fish's backbone.

I guess Googling GAENG TAI PLA แกงไตปลา should turn up more recipes.

I will recommend Tai Pla steam, ( not lot of people know this curry )

recipe

Tai Pla

lemongrass

turmeric

garlic

chili

chop lemongrass,turmeric,garlic,chili than mix it all with Tai Pla after that steam it for 10min.

ps. sometime you can add little bit coconut milk

I always thought dtai bplaa was fish kidney...?

Tai mean kidney, but Tai Pla is not real word for its, this word just people from BKK call this curry for local name is Pung Pla( Pung mean belly) becouse they use fish belly mix with salt and keep in a box or jar for over a month.
