What Documents Do An Ngo Need To Provide To Get A Work Permit ?

We are going to apply for a work permit ourselves. What documents do we need from the NGO to get it ? On Thaivisa it says :

Its not difficult; just have the non-profit organization apply with a document stating that you have joined them as a volunteer.

why do I get the feeling it might not be that simple ?

#Does this letter need to refer to us other than to say we are employed by them - does it need to go into details about the NGO, its finances etc etc ?

If the NGO itself does not know what information should be supplied for the Work Permit application letter, then IMHO it is best to get that information directly from the Provincial Labor Office that will be responsible for issuing any subsequent Work Permit. Here is the list:

There are several documents you will need from the NGO, and you will need some forms from the Labour Office to be signed by you as well as the NGO. So take Jazzbo's advice and inquire at the local labour office while getting the forms.
