So today I got my visa extended for a month, then I will go back to Italy (<deleted> finally!) second week of May. My issue is that my passport is left with ONE page, and I'm afraid the Italian Embassy won't make me a new passport within a month. So my question is, can I go back to Italy with my current passport? Is one page enough for the stamps and whatnot?

You should have no problem. When you get home get a new passport or have pages added.

AFAIK Italy does not stamp in nationals (or any EU nationalities) so you'll have no problems even if the PP is completely full.

... Why would I need to come back to Thailand to renew my Italian passport? XD I can renew it there, I'm Italian not Thai.

I don't think your home country would deny you entry because your passport is full.
