does anyone know if it's possible to use a Debit Card to book a flight? (e.g. with Emirates or Qatar Airways)

Providing the bank allows you to use your debit card on-line then you shouldn't have a problem, though many don't, I suspect you can use your debit card in the airlines office.

Kasikorn have their virtual card that can be used on-line, but Qatar specifically say that you cannot use a virtual card to purchase flights on-line as, they say, you need to show the actual card at check-in.

 I have used a Bangkok Bank debit card to buy tickets with Bangkok Air, Thai Air, Singapore Air and Delta/NWA.

But it would depend on whether the system you use is set up to deal with DEBIT cards.  Some are not and can only handle credit cards.
