uptheos
If you have a pan and burner where you reside, buy a packet of Lobo Massaman paste 12 baht, a few ingredients and hey presto!
daoyai
Try different shophouse curry sellers, lift the lids of the pots, look and smell, you can even ask for a taste.... ..... that said, CM doesn't have the best Masaman, Gang Ga -lee (really), is similar in taste. afarang
Gang Ga -lee (really), is similar in taste. No it isn't! It sure is not. Remember ,it is a Muslim dish. Very few Buddhists will make it. I am not M.or B. or C.or any other ,but I love Gang Masaman, Fortunately, where I live a lady makes and sells at our Monday evening market. I am sorry to have to tell you it is about 1,000+ kilometres from C.M.

Most curries taste better the further south you go but in C.M. it is available everywhere, had some the other day with pumpkin instead of potato... Not necessarily better but definitely hotter, especially from Nakorn Si Thamma rat,My Masaman cook is in Deepest Southern Isarn, nowhere near the south of Thailand. If they do not use a bit of spud, it is not Gang Masaman. It must be chicken and potato to be called Gang Masaman

snarky66
You can buy the curry pastes in a packet at the grocery store. Massaman beef - delicious = needs beef cubes, onion, potato & peanuts. Ditto Massaman Kai - just use chicken pieces instead. Pretty sure it's needs coconut milk.
