Chili recipe ideas? Hi guys,

My gf wants to make chili tonight. Do you have any ideas for recipes? I know that ingredients like peppers, onions, ground beef, garlic, beans, tomato, and some spices like paprika, cumin, salt, pepper, etc are essential, but is there anything else I can add that will make it taste even better?

Try this one, it's good:

Chili- with Italian Sausage and Beans (but no Tomatoes)

Ingredients

  • 1 tbsp vegetable oil
  • 1 lb hot Italian sausage links (can use sweet sausage) (or, can use chopped or ground beef)
  • 1 tbsp olive oil
  • 5 oz pancetta, diced (can use bacon)
  • 1 large yellow onion, diced
  • 4-6 garlic cloves, minced
  • 1 green bell pepper, diced
  • 2 cups dry cannellini beans, rinsed (or can use 1-2 cans)
  • crumbled Ritz or Saltine crackers
  • 1 can of corn kernels (optional)

Spice mix:

  • 1 tbsp oregano
  • 1-2 tbsp ground cumin
  • chili powder, to taste
  • 2 tsp red-pepper flakes
  • 2 qts. (8 cups) chicken stock
  • coarse salt and ground black pepper to taste

Garnish:

  • sour cream
  • ½ cup green onions, cut into long strips
  • ½ cup fried leeks (can use: shallots or onions)

Instructions

Film a large stock pot with vegetable oil and place over moderately high heat. Brown sausage on all sides. Reduce heat to low and cook through, 8 to 10 minutes. Remove sausage from pan and cool. Discard grease. In the same pan, add olive oil and pancetta (bacon). Render pancetta (bacon) over low heat until crisp, about seven to nine minutes. Add onion and cook until soft and translucent, five to six minutes. Add garlic and sauté until golden, about three minutes. Add remaining ingredients, increase heat, and bring to a boil. Dice reserved sausage and return to chili mixture (now add corn kernels, if using). Lower heat and simmer until beans are tender, at least 90 minutes, stirring occasionally (if using canned beans, simmer at least 30 minutes). Season with salt and pepper to taste. Serve each bowl of chili with a dollop of sour cream; some green onions; fried leeks (shallots or onions); and crumbled Ritz or Saltine crackers. Serves 4 to 6.

I would suggest moving this topic to western food for more input.

Added benefit will be within 3 posts the 'experts' will tell you real chilli only comes from texas etc.

I like chilli by the way.

Op....try adding some anchovy and then a little bit of dark chocolate in place of sugar about 10 mins before finishing cooking. wink.gif

Yea smokes, seems when I post an alarm goes off KPG HQ.

Back to chilli, what I would really like would be one of those big chilli (that will be 5baht colin;)) cookoffs/bbq outdoor thingys where we could go and try out a bunch for charity. As the end of it we could hold a fart competition.

Two years ago, they had a chili contest at the July 4th American Independence Day Celebration. There were only about 10 entries, but four or five were really quite good, in my opinion.

I seem to recall that, I didn't stick around to the end (son was getting too independant).

Would be good to get a list of places that make good chilli. I had some a roadhouse the other day-steak but not spicy enough for my taste.

Thanks smokes, I make a pretty good one myself, good enough for me to resist the urge to hop on bkairways, spend 5k a night in chaweng, and buy a bowl of your chilli.

Chilli is not hard to make just takes some time-always seems to taste better the next day.

Might make some this weekend now that I am duly inspired-assuming there hasn't been a run on ingredients at my local once everyone else reads this topic.

Yea, I am kind of ticked at myself for not noting the places which made the chili I liked.

I useta make chilli in Thailand with ground beef and kidney beans...I even hand carried a 1000watt meat grinder from Bahrain for that purpose (and bolognaise, meat loaf, etc)...

then, one day I went off to work and left my kitchen unattended and a monster entered and stole all the attachments for ground beef and left the grinder forlorn and worthless...I was reminded of the carcass of a baby seal after the seal hunt...

them...all of them know who did it...and they even liked my chilli when I high dosed it with ground chile powder...

the evil that thais do...:angry:

I suspected my step daughter 'cause she's jealous that I can cook better than her but now I'm not so sure...she's been a real sweetheart lately...she minces up pork with a cleaver...

anyway, the grinder is still available to buy and parts are available on the internet so, etc...

no biggie...this is from student days when we wanted to feed a lot of people cheaply...usually 6-8:

onions and garlic to taste; we liked lots of both and they're cheap

2 lbs of cheap ground beef with some fat in it

4 cans of cooked red kidney beans, drained and washed

cans of cooked tomatoes, tomato sauce and tomato paste to cover...this is to individual taste

red chile powder, salt and pepper...

the preparation takes less than 30mins, simmer for an hour, leave longer simmering and tastes better.....smoke dope and drink cheap red wine until pronounced ready to eat...if yer lucky there's a loaf of nice fresh french bread somewhere...

we would argue; a room mate would approach with italian seasoning and green pepper and I'd say: 'get outta here, this is chilli not fcukin' spaghetti sauce goddamit...'

we useta have a great big cast iron skillet that we used and the left overs were always left out on the stove...any bread left and late at night you could 'wallop' a crust in the sauce for a snack...

later on as an adult I started adding cumin and etc...

that big skillet, not only was it seasoned to perfection but had sentimental value as well...an old girlfriend sneaked in and stole it for our use when those in the household went our separate ways...and I left it with her when we split up...'tutsi, yew bastid, I stole this for us...'...(*cringe*)

a skillet is a great big cast iron frying pan such that the pioneers had lashed to their wagons as they crossed the wild American frontier...use them for every thing from ham an' eggs to corn bread...if it's big enough it can be used as a griddle...

in the chaos of student life with the associated upheavals and excesses ours came to represent stability and conformance with traditional values...I still dream of it (yeah, I've woken up more than once and went lookin' for it in the kitchen) sometimes when when I dream of those times...

and, yeah...the skillet in question had enormous sentimental value...it was the focus of our communal meals at a time when that meant sumpin'
