I would say anytime could be good

(not too late in PM)

They do NOT close for Lunch.

The officials are very helpful so there

is no need for apprehension.

At Times. - when the Interview Room

(which has seats) gets busy

they introduce a Numbering system

so look around to see if you need to get a Number

Its time to try and get my Category O for a year.

if you are talking about a one year extension at THAI Immigration, there is no lunch hour. AM or PM doesn't matter either, take a number and wait about 10 minutes average.

if you are talking about going to a consulate/embassy outside Thailand and are asking these questions...

As we don't know where you are we assume it is Bangkok and that you are talking about extending a current cat O visa. Here there is no lunch hour observed but there will be fewer people attending desks. If in Bangkok first you obtain/fill out/return, with fee, TM.7 extension application at front counter area (need photo for this). You are then directed to back room where you may or may not need to get number card for service. There are chairs to sit in while you wait. If for marriage be sure your wife is with you and you have original/copies of paperwork. There is now a copy machine just outside these rooms that you can obtain cheap copies if you forget any. If that is down there are places across the street that have good knowledge of exactly what is required.

If this is first time also bring photos of you together at home to give them. Copies of home register/id card should be signed by wife and you should sign copies of your passport pages/bank book (both sign if joint account)/bank statements and don't forget the bank letter of deposit.

It is only about a 30 minute process if all in order and will probably be mostly wife answering address type questions for form that has to be signed.

Believe you will find it much less stress that thinking about it. Just keep a cool head and observe normal manners/appearance.
