I'm not sure of the exact name for these "elastic type nets" for meat actually is, I would like to know if there is anywhere in BKK you think I could pick them up ? I've tried string but I think when cooking the meat it doesn't allow enough expansion and the meat remains a little salty. If there is food grade elastic string that could do the trick as well. I removed the string on my last boiled supper and it was a mess.

If there are any Canadians you'll know it's the netting on Cottage Rolls.

For those interested in "Poor Mans" corned beef here is the brine recipe-maybe because I grew up with it I have to say it is one of my favourite meals.

How about something like a fine mesh fishnet?

I just asked my wifee as she was off to the village and I showed her a small fish net and got a mai loo in return.

Please let me know if you find something.

Today I went down to the village and in one of the general stores they sell loads of fishing stuff.

I bought a mesh net on a ring about 30cm diameter and also a net of fine mesh nylon and oddly a ball of string for 250 baht the lot.

Now I am brining some leg of pork to make ham and when I cook it it will wrap the ham in mesh and tie it with the string and that should work.

I am not planning to get it too hot, more a case of holding it together in a sort of roll as it were.

My wife had to order that cut, the thigh of the pig and had it deboned for me, she then cut the outer skin off and used that for something.

I told her that the cats and dogs would love the bone but that will soup.

I am brining it now and after a week I will cook it and see what it is like.

2 options, it will be great and I will eat well or it won't at the cats will instead.

I wish I could learn how to tie the knots like the professional butchers maybe a little slack in the knot would do the trick for me, but I'm not really sure of the proper string to buy do you use normal string or is there something you suggest that is easy to pick up here ?

The above cottage roll I love isn't really on high heat more of a gentle boil if that makes any difference.

With trussing by string, you can incorporate a few slip nots into the tying that will allow the ham to expand but not fall apart. Very difficult to explain how, but it needs to be strong enough to only swell with the meat and not just fall off. Perhaps call up the western butchers here and ask them to order you some?

There are loads of butcher supply companies all around the world - send a few an email and see if they will send you a roll of it. I would imagine that one roll would last you for ever so no problem.

There are loads of butcher supply companies all around the world - send a few an email and see if they will send you a roll of it. I would imagine that one roll would last you for ever so no problem.

I'll try to master knots first then I'll ask one of the many relatives who visit to source it and bring it as a gift, in the meantime your bacon recipe is spot on-Thank you loving every bite.

I actually bought 2 fishing nets, one is nylon and the other is string plus I bought a ball of string as well.

I wont use the nylon this time and perhaps it will used for its proper purpose.

I have several days to practice my slip knots.

Western butchers? Mmmmmm i need to try to find one or two.

Lots of ebay places in the UK but they won't ship to Thailand.
