Turkey.

"According to the decision taken by the Council of Ministers of the Republic of Turkey and published in the Official Gazette number 28333, citizens of Thailand holding ordinary passports are granted visa exemption on their touristic visits to Turkey for a period of not exceeding 30 days on each of their visits for a cumulative of 90 days within 180 days period from the date of first entry."

Gib would be good, but you would get bored and want to walk over to La Linea.

A bit further out but why not Russia, no visa required for Thais, but you might need one.

Or Turkey as the other poster suggested.

What about the Highlands and Lowlands of Scotland, lovely places, or even the Lake District

It all depends on what time of year. I visited Scotland for the 1st time last summer with a friend and enjoyed it immensely. We rented a car and visited a couple of the islands, Mull and Skye as well as the Highlands and stayed in B and Bs throughout. The hospitality was amazing and we met some really nice people. The last 3 days were spent in Edinburgh during the festival, the highlight being the Tattoo of course.

See recent topic about Schengen Visas - apparently under an EU directive Thai spouses of UK citizens dont need to have visas for Schengen countries but its not easy because of all the ignorance about it - please see the posts.
