Cut up the meat, apply salt to both sides, and store in the fridge. Even one hour will tenderize it remarkably. Overnight is even better. And it'll keep your pork looking pink much longer. Actually now Thai beef is more tender than NZ and Australian export beef. ie. PonYang Kham, KU beef, and Thai-French beef.
