I had to look it up but it seems it's a common ingredient in Indian cooking.

Too late now but there are a few indian grocery stores in chiang mai. Another name for the plant is Pandanus. In Thai it's Bai Doi, I think lots of places sell Bai Doi flavoring though most of it is artificial. You should be able to make it yourself by boiling Bai Doi leaves and then boiling the liquid down until it's at a suitable strength.
