hey, I've living in chiang mai for 7 yrs, and I've heard from long staying backpackers who stayed at farms in Maejo (just north of the city) and they did cheese making workshop. I don't remember what kind of cheese they made, but they named at least 5,6 names.

I don't recall the name of the farm but I am sure if you contact someone at Maejo Univ, they can find a place for you. Maejo univ is the biggest agricultural univ and farms are around there. I am sure they would know where you can find OR they might offer such workshop themselves.

and there is a bulgarian guy in chiang mai who sells his yoghurt products at MaePing markets. I hear he makes cheese as well. maybe worth asking him. His comp name is Bulgarian Yoghurt.

good luck
