Before I drag my sorry carcass off to Pattaya to check it out, is there any chance of a proper description of what is available? "An abundance of popular regional dishes" doesn't really tell me much.

Raw fish?  I think you have the wrong assumption of what's on the menu.  Very little sashimi/sushi, mostly grilled items.
