As far as the Vibrio, it's been more of a concern the last few years because of warming Gulf waters. It's always been said, eat raw oysters only in months with an R. I've eaten them quite a few times, but not in the last 8+ years I've been here. Vibrio cases mostly come from other sources, like wading in brackish or coastal waters with open cuts. Sticking to well known restaurants, who are likely to have more concern for handling them is a better choice. Some people should avoid them anyway. Immunocompromised, young kids and pregnant women. Best to to eat them cooked, although that takes the fun out.
