It maybe a Papaya substitute? Not sliced or diced but whole! No Thai chilli involved but a distincly spicy theme. I'm starting to feel left out To quote the words of Bugs Bunny "What's up Doc?" Is she back with you now in the UK or have you and the twins made it to Isaan? I did feel for her and your Bank Account. Sort of unusual for a Thai to crave carrots as it's not a 'standard' Thai Vegetable. Still, more veges in the diet would have to be good for her ... for most people.
