If I were to get hired as a waiter in a restaurant, how would the process for getting a visa work? Do I need to leave Thailand to get the visa stamped? What happens in the 90 day reporting - do they ask for pay stubs?

firstly you need to apply for a work permit, and get a receipt, with this you can get a Non Imm B visa (there is no such thing as a working Visa). However, I believe waitering jobs are not open to farangs

Because you are not allowed to jobs that Thai people can do. Don't you read the news... And if your fwiend gives you a piece of paper claiming to be a work permit paying you 50 baht a day, well he really isn't a fwiend.

If waiters, waitresses and cooks were forbidden jobs for foreigners the foreign restaurants would be in bad shape. Your biggest problem of being hired, I think, is that there is a minimum salary requirement to obtain a work permit which varies from country to country. Most restaurants can hire locals to do the job at a lower salary unless it is a really high end restaurant.

For work permit there is no minimum, but there is for an extension of stay. So some people goes for a new non-imm. B multi-entry and has to border hop every 90 days.
