August 13, 200619 yr My husband really likes to eat the bowls of noodles you can get most anywhere, but we live a bit far to trek there just for lunch. How do you make this very, very simple dish? I have the right noodles, the kind you just soak, the odd large-leaved fat-stemmed greens, onions, chicken broth, meat, cilantro, green onions...How do I put it all together? And as an afterthought, is there anything other than vinegar and chiles in that small dish you use for seasoning some other foods? I'd like to make some for seasoning the sadly mediocre and bland fried rice I get from the only local place.
August 13, 200619 yr How do I put it all together? from the bottom to top cooked veggies +cooked noodle + chicken broth then topping with cooked meat (as bbq pork ,boiled miced pork ..etc) + fried garlic and oil + topping again with chopped coliander ,green oninon+ pepper is there anything other than vinegar and chiles in that small dish you use for seasoning some other foods? sugar/fish sauce/chilli powder (in thai style we added unsalted roast peanuts and lemon juice)

Hey Cathy, My wife and I have a noodle snack that is delicious at any time and is ready in 5 minutes. We buy some good quality instant noodles (korean are best, just not the cheap and nasty type) While that is simmering we put some dried chilli flakes, coriander, spring onion , Bok Choy and a splash of fish sauce. We always have frozen king prawns in the freezer and maybe some scallop meat so we throw a couple of those in and then...gently crack an egg in the simmering brew and let the egg poach. My wife is a fussy Thai eater living in farangland for the moment but she loves this and dresses it up with her peanuts etc when it is on the dish. Good, cheap, easy meal
