You will get a 30 day visa exempt entry when you arrive. You can get a 30 day extension at immigration of that entry.

If you leave and re-enter at a border crossing you will only get 15 days.

No we dont need stamp for 30 days. We are going on a trip to Cambodia for 2 days. It turns out if we arrive in Cambodia, the stamp 30 days will be cancelled and when entry back into Thailand by land we just get a new stamp but only for 15 days, right? We dont need to do re-entry additionally before arriving in Cambodia?

You don't need a re-entry permit to leave the country.

You will be stamped out of the country. Then you will need to get a visa on arrival for Cambodia ($30 US) to enter there.

When you return you will be stamped into country for 15 days.

If you need more than 15 days you could apply for a 30 day extension at an immigration office for a fee of 1900 baht.
