I notice when I buy expensive cod from the local foodmarket

that when defrosted you can wring the water out like a sponge.

Are the suppliers intentionally loading the fish up with water

YES just like they do with the chicken in the UK, Inject as much water as possible to increase the profit margin & sod the customer.

why buy frozen fish anyway ,go to a market and get the real mccoy!

when I can find good local sea fish it is usually quite nice. When you go to the supermarket you can find many good substitutes for cod which is a cold water fish and not available in LOS fresh. Inna big outdoor market you have to buy the whole fish and maybe get the seller to fillet to a whiteman's satisfaction...sometimes not possible...

get yourself some skinny knives and have a go...
