Lime juice

Featured Replies

Ok i want to make Caipirinha, for which I need lime juice, and lots of it as i want to make jars of the stuff.

The closest to lime juice i can find is in Makro and which are bottles that claim to be 45% lime juice and the rest citric acid and water. All the others are water with citric acid.

Can I use that stuff or is there somewhere pure lime juice available, at affordable price of course, because if i see that a single lime cost 8 Baht I can imagine what a liter of the juice may cost.

74 views in the food expert forum, and nobody can answer a simple question if I can use the juice with 45% lime and 6% citric acid, or if not where I can find the lime juice I need to make cocktails?

Go to your local market and you will probably find some in bottles. At our local market you can watch the vendor slowly working through a mountain of lemons squeezing out the juice for bottling with nothing extra added. However , limes are seasonal and the price and availability can vary a lot.

That is what I mean. I've seen lately limes at 8 baht a piece in the market, which would make a liter of juice around the 2000 baht figure I assume.

I doubt such a pricey liquid is used in cocktails.

Lime juice that is not made with atleast 75% lime juce will just taste sour.

So what do the bars use for cocktails that require lime juice?

Do they use natural juice or some kind of syrup, or maybe diluted natural juice?

I'd google "striking a sour note", and read the recent article about lime juice before using any of the supposed bottled variety in thailand. Makro has frozen kilo bags of pure like juice for about 100baht.

FYI, Rimping sells "Good Fresh" lime juice. No flavoring, no coloring, no citric acid. Ingredients: fresh aromatic lemon-lime 32%, sugar 4%. 1 litre is 195 baht. Phone number for Good Fresh is 089 176 4267.

Pure lime juice is available inside limes.
