Popular Post maderaroja
Try the Queen Siriket Botanic Gardens. They are lovely and photogenic. There is also a nice lawn to have a picnic, (take your own).
bazza40
Try Udo's German restaurant "Auf der Au" about 400 metres past the Kong Sai intersection on the old Lamphun Road. Evening buffet Friday, Saturday, and Sunday. 250 baht, don't know how he makes a profit. Cold entrees, hot dishes and desserts such as Apfelstrudel. Bring an empty stomach. OK, not Thai - who cares? The Box Cafe on Changklan Road makes a excellent Mussuman curry - goes very well with their pineapple smoothie.
Johpa
Drive up to Eagle Track Zipline in Tambon Mae Raem, Amphoe Mae Rim. You get a free, but limited, buffet lunch included in the price. There is a nice scenic waterfall at the zipline to spend some time relaxing or reading a book. You can stop on the way up at the above mentioned Dara Phirom museum in Mae Rim which is indeed a really nice museum documenting a lost era of early 20th century royal living Lanna style. Or you can head up from the zip line to the multitudes of the Mon Doi camp and view sites around the Mong village of Nong Hoi at the top of the mountain such as Mon Cheam. Drive down the backside of the mountain to Pong Yang and then you can stop at the Queen Sirikit Botanical Gardens driving back into town as well. Something for everyone. Chicog
Chiang Dao caves, it's a lovely scenic drive up there and you can have a wander around afterwards. It's rumoured that there is stolen Japanese treasure buried in there somewhere. http://www.tripadvisor.com/Attractions-g1216713-Activities-Chiang_Dao.html
monkeyboots
Hit the walking trails on and behind Doi Suthep/Pui for some tasty viewpoints/waterfalls if that's the sort of thing you are after - very rarely see anyone else around.
northernjohn
The Art museum on Changklan in between The ShangriLa and the Empress hotel same side of the street. It looks like a museum on the outside. Big White building sorry I can not be more precise with the location. It has some fantastic opportunities for pictures with you being a part of it and looking perfectly natural. I would recommend a group of three some need two people in them and one on the camera. LawrenceN
Taweechol Garden, on the left on the way out Hwy 118 to Doi Saket. Fantastic gardens full of palms from all over the world, orchids and bromeliads. You can hand-feed ostriches, and see deer and exotic wild cattle. Peacocks! It has a labyrinth, and a very nice swimming pool. There is a museum with old photos of Chiang Mai and antique tools and pottery. Buffet on weekends. Look for the orange roof of their exhibition hall about six km past the last ring road (aka 121). Edited April 24, 2015 by LawrenceN

How do you get there? There is a nice trail-head at the channel 7 TV tower, which can be accesssed from Suthep, by car or about a 30 minute walk from CMU back gate (engineering school). Another 30 minutes puts you at a nice waterfall. Perhaps, a famous "soapy massage" on the way home, also close to Suthep. monkeyboots
Hit the walking trails on and behind Doi Suthep/Pui for some tasty viewpoints/waterfalls if that's the sort of thing you are after - very rarely see anyone else around. How do you get there? Lots of options but not easy to describe unless you are familiar with the area. Try going into the Forestry HQ a km after the temple on Doi Suthep. Look out for a small sign going into the woods on the right for a short walk to a massive strangler fig tree which is hollow as it as completely destroyed the old host tree - nice spot. Stay on that walking trail and it will lead you down to a small waterfall (25 mins?) and eventually down to Monthatarn bigger falls below (50 mins?) Go down to the commercial hill tribe village, Doi Pui, and out the back onto the rough road above the (man-made!) waterfall. After about a km there is a walking trail that goes off and up to the right. Follow that for about 1 and a half hours and take the trail to the right that goes up to the top of the saddle back ridge and sit and contemplate the great views north and south sitting on Drum Rock next to what's known as Buddha's footprint (sign only in Thai). As I said this assumes some knowledge of the area and if you are just passing through then all this will not make much sense! Either way, hope you find some tasty spots. Cheers.

chiang mai
Call me selfish if you wish but I prefer not to share the CM gems I know of on the internet, if I do that, as I did with Chiang Mai itself many years ago, pretty soon the gem becomes a piece of coal. Nothing personal of course.

To the OP, Opkhan national park is another nice place, with lots of water and a walking trail along cliffs. This place is relatively close to the city, on the south-west side.
