Searching in older threads did not really bring up much.

In my home country this was often a side business at key cutter booths.

Seems not here.

I want to have some engraved signs (preferrably from plastic) amongst others for the mailbox.

Who knows a shop within the Pattaya / Jomtien area?

Don't know about engraved plastic signs, but if wooden ones would suffice there's a place on the left of the railway road (southbound) just a 100-200m or so before the SSCC junction that does them.

Those plastic signs don't seem to be a popular product in Thailand.

there are many places in BKK Chinatown area around the traffic circle that make those engraved plates....

but no idea in Patts
