I would like to know if any January PR applications have been approved yet or if they have an idea of when?

Another question I have is if someone changes job after applying for PR, would this impact the application in any way?

I doubt very much any have been approved yet. They have been working to clear a backlog of applications that were done years ago.

Changing jobs would not effect your application.
