I arrived in Chiang Mai on 18 Dec from the US on visa exempt & am departing on 3 Jan. In the interim I am leaving on 20 Dec for the Maldives returning 23 Dec. What is the proper procedure for Re-entry?

There will be no special procedures to be done when you re-enter the country. Just show your passport and arrival card to be stamped in for another 30 days,

They will issue you a new 30 day stay (visa exempt entry) when you return from the Maldives.
