March 23, 201610 yr Best place to find cheese mold is probably at the back of my fridge. Best place to find cheese mould is probably somewhere that sells kitchen utensils. You don't say where you are so it's hard to give any more than general advice. If you want the mold from my fridge, just let know....
March 25, 201610 yr Do you mean 'Mold" as in stilton or Danish Blue cheese? if so, I can't help. If you mean something to allow the cheese to drain after removing it from the whey, then I might have an answer. First of all, where are you? Thailand, or overseas? I live in Bangkok and make farmers cheese all the time. I have no special equipment, just a heavy bottomed saucepan, large slotted spoon and a cheap collander. I got my collander from Tesco, it's very basic, with a handle and small holes. It actually looks home-made. I've also seen these at the local markets so it shouldn't be difficult to find. Boil your milk Add your lemon juice or vinegar Allow the curds to form Remove them from the whey with the slotted spoon Drain them for 30 minutes in the collander Put it in a bowl Add garlic, herbs etc and mix well with a fork Put the bowl in the fridge.
