What Kind Of Eggs ?

I am rather partial to the pink shelled pickled eggs which I am told are called Kai Yeo Ma which means "horse piss eggs". Can someone reassure me that the name is not meant to be taken literally? A bit like "kee neow" I hope!!

In what liquid are they actually pickled?

According to a persistent myth, century eggs are or once were prepared by soaking eggs in horse urine. However, this is not true since urine is usually acidic or very weakly alkaline, and the myth may arise from the ammonia smell created during some production processes.
