I originally entered Thailand with a Tourist Visa from my Embassy, and then I converted to a 3 month Education Visa.

I have an Australian passport.

Will there be a problem if I go to Chaengwattana and ask for a Tourist Visa extension after having an Education Visa - because I have ceased my studies and wish to stay in Thailand for tourism.

It is not possible to extend a ED visa unless it is for attending school.

You will have to go out for a tourist visa or possibley a border hop for a 15 day visa exempt entry.
