Are there any butchers around town where I can get a nice piece of pork for roasting?

The one on Thappraya Rd is gone, Yorkies only had bacon & Tescos on the Suk had pork fillets, steaks, ribs or chops already cut up into portions.

In fact Tesco didn't even have any whole chickens apart from cooked ones which I'm not that partial to as they seem to inject it with some kind of oil to keep it moist.

Foodland and Friendship have roasting joints, rolled and tied. They will even score the skin for better crackling if you ask.

I've mixed some garlic, paprika, chile flakes, salt pepper, lime juice & olive oil then rubbed it into the joint.

I've put it into a low oven at 150C on a trivet of chicken feet, pork rib & a couple of unskinned onions & will check again on it in 3 1/5 hours.

Then I'll take it out to rest & remove the fat layer on top which will go back in with my veggies to roast in the dripping & crackle at 200C.

I'll then make some gravy with what's left in the bottom of the roasting pan by deglasing it with some cider vinegar & a glass of white wine.
