This might be a silly question, but if I try to extend a multi non O before it expires ie after 6 months, and can't get extension ( for a non criminal reason eg can't get proof of residence ) is the rest of the multi visa still valid ie for the remaining 6 months?

Immigration will not accept a affidavit for proof of residence.

Typically they want a rental agreement with copies of  the owners house book and ID attached to it.

Besides, many  don't rent here if living with a partner.

I have never heard of an immigration office accepting a affidavit for proof of residence,

If living with a partner they could do a statement that the person applying for the extension is living with them. Then show their house book if it is their house or a rental agreement plus the copies needed.

If you apply for a new METV and you still have a valid METV in your passport they would almost certainly cancel the existing visa when issuing the new one.

The number of back to back visas allowed is entirely up to the Embassy/Consulate that you apply at. The METV was only launched last November so it's too early to know how repeat applications will be treated, and it will no doubt vary across the world. IMO some Embassies will limit multiple back to back visas.
