I'll be arriving in Jomtien Beach in July and I would like to apply for a retirement Visa.

 I am still working in Australia and have pay slips well above the 60K a month.

 I'll be arriving  on a 30 day entry (no visa).

 

Is this possible, and what other doc's do I need?

It would be much easier if you entered with a Non imm O Visa.

 

There is no retirement visa.

 

You can apply for a 12 month extension of stay based on retirement.

You will need a letter from your embassy stating  the monthly income.

Unless you have a non immigrant O visa for entry when you arrive you will first have to apply for one at Jomtien immigration prior to the last 15 days of the 30 day entry or the 30 day extension of it.

You will need to have a statutory declaration from the Australian embassy to prove at least 65k baht  income (not 60k baht).

Then during the 30 days of the 90 day entry from the visa you would apply for a one year extension based upon retirement. You will need to show proof of 65k baht income again when you apply.

They state that in Australia, I need the equivalent of 800,000 k in my bank account, not a salary, plus I have to mail my passport which I would rather not. Wouldn't it be easier just to come to Jomtien immigration with a letter from my embassy?

That would be for a OA long stay visa that also requires a background check and medical.  The do accept a salary to apply for the OA visa.

As far as I know a single entry non-o visa is not available in Australia for being 50 or over for retirement.
