    2. I now use the same brand of bread flour as always, (but a new recent purchase). I do not know the gluten content. There is very little information on the packaging, but the supplier is a large company here in Thailand. (And, I have had good luck with this brand in the past.)

    3. I use the same recipe, except I have increased the relative amounts of ingredients as follows: 840 grams of flour. 520 cc of water. 2.5 teaspoons of instant yeast (same brand). 4 or 5 tablespoons of granulated sugar. 4 tablespoons of sunflower oil. 2 teaspoons of salt.

    4. I always select the “dark” setting on both machines.

    5. Both machines turn out loaves that look OK.

    6. I use PERFECT brand yeast which has not expired.

    7. I do not proof the yeast.

     

    So, anyway, does anyone have any suggestions? I do not bake bread to save money, but because it’s more convenient than traveling to the store. Also, I do not like the bread being sold here.

     

    What I would really like is to duplicate the taste of the best bread I have ever eaten, which was bread available in Dalian and in Hairbin, China.  Must be the wheat up there, but it was amazing, and you could taste the wheat flavor.

     

    I can’t think of what else to add here, except that I was paying about Bt35.00 per kilogram for the flour (for over five years), which now goes for Bt42.00 per kilo when I buy a case of 10 kilograms of 1-kilo packages of flour.

     

    I would prefer not to dump the 20 kilos I bought six weeks ago IF I can solve the baking issue, if it is only a baking/recipe problem.  However, I doubt I can continue eating bread that tastes like cheap cake. (Of course, I would not “dump it” and instead would just give it to someone that might like it.)

    Please note: I do not want to pay an exorbitant amount just for bread flour.  In the US and in China, bread flour is not expensive, and it seems quite satisfactory in flavor.     4/5 Tablespoons sugar? No wonder it tastes like cake. For 1200g of flour I add 1 teaspoon of sugar to the active yeast water. I must confess that the flour now seems to vary a bit.

    but still he persists this morning.

    'you come from where?' how long you stay here? you like thai food?

    all i want to do is collect my wifes parcel and go about my business.

    I do not want to chit chat and I hate small talk, especially when they are using probing questions.

     

    why does he continue to want to befriend me if i have made it perfectly clear i dont want to?

    I usually no longer open the door to postmen but today i was so busy i just answered automtaically. 

     

    do they not get the hint? do i have to tell him to eff off for it to hit home that i dont like him?

    maybe next time i will let loose on him if he starts chatting me up again.

    He seems like a nice boy.????????

    It's just a fact of life for a significant number of men.  Why?  I don't think that any one has ever explained the mechanics no less a way to keep it from happening.

  6. I watch Bangkok Post on line. They updated and modernised their website last week. Today I can't find Roger Crutchley's column, Old Crutch.? Anyone having the same problem, or am I looking in the wrong place?

    Prior to take off from an airport in the Middle East I suggested to a stewardess that a passenger was drunk and I didn't want to fly with him. He was removed from the aircraft. A person who is drunk, from and in a country where alcohol is banned is a bit suspect.

    Having left England over thirty years ago I had been lucky enough for over fifty years to experience good TV drama. Dramas that gave food for thought and in an English language that was clear and understandable. Much the same as the films that came out of Hollywood in those days.   9. I never had the chance. During part of the war I was evacuated. Then he was in the Royal Navy for five years. Then I went in the army for my National Service and he died aged forty one in 1953. His last words to me were "Look after your mum." I suppose I'm more like my mother. I brought her here to Thailand to live out her days and she died here aged eighty eight. I've outlived her so maybe I'm more like her as regards longevity, so far.????

    Inexperience and overconfidence are not good qualities for  new PM.

    But isn't his policy on sec. 112 what the people voted for? Obviously the majority of the voting public want it changed.

  11. During the UK Mad Cow disease, scare, Thailand banned all beef products from the UK. Is that ban still in operation? It seems that the supermarkets do not now carry Knorr beef stock cubes. Oxo cubes. Bisto gravy powder and the like. Or is my wife shopping in the wrong places around Pattaya?

    But he was voted in. That is democracy. Non voters have no right to a say in anything they should have voted on.
