Better to arrive with a Non O Visa if possible. If not then a Tourist Visa or a Visa Exempt Entry will do. Medical Insurance is not needed. Your biggest problem might be opening a bank account. You might need an agent to help with that. For a fee of course.

Probably better to arrive on a Tourist Visa and apply for the Non O and extension once in Thailand.
