You apply here https://www.thaievisa.go.th/ All the details are there. Easy to get a single entry tourist visa, 60 days, then the 30 day extension as you mention. You could also get a single non-O based on marriage, that would give you a 90 day entry. But you would need more documents and likely need THB400k in the bank for that one. -
It's fine for a few days. Plenty to see and do to keep amused but nothing is cheap. It's not 3 hours to Abu Dhabi, more like 1.5-2. If I had enough money to retire there I wouldn't, I'd be somewhere more naturally attractive. Good food can be had everywhere and Lebanese and Indian at good prices. Girls are expensive and the Russians are not much fun, best if you can find a Filipina working there doing a bit of sideline at night.

I presume you did already contact your Embassy? They can issue an emergency passport quickly if needed. "If you have an urgent need for a replacement passport and can show proof of imminent travel, we may be able to issue you a limited-validity emergency passport within 72-hours at the discretion of consular staff. Also, if no appointment is available, you may be able to appear during appointment hours without an appointment at the discretion of consular staff. It is recommended you appear at 7:30am Monday –Friday (except U.S./Thai holidays or the last Wednesday of the every month). Please note: An emergency passport has only 5 pages, maximum 1-year validity, and is issued under special circumstances. The validity cannot be extended and pages cannot be added." -
You will get the extension the same day. It will be dated 12 months from your 90 day entry stamp (exit date). Yes. It will have the same end date as the extension. You will get a slip in your passport advising you to do a 90 day report 90 days from the date you go for the extension. It is possible but not relevant if you do what you say you will. Just make sure you get the extension first. Should be more than enough time. The re-entry permit area in inside the immigration area on departures (far left). It has recently been revamped with a small waiting area in case there are a few people at the same time. I was with 3 people last week, 2 of whom needed a REP, took maybe 15 minutes and they were both done. No preparation is required, they will do the photo and form for you. -

No. The form says "You must ensure that you have checked with your card provider that your card is valid, for this international transaction". Payment is taken in the UK, if they wanted only UK cards then the transaction wouldn't be international.
