There is no overstay fine for a one day overstay it leaving from either airport in Bangkok. You can also apply for a 30 day extension of your visa exempt entry for a fee of 1900 baht. It only takes few days (48 hours is shown on the site) to receive the Thailand Pass after applying.

I cannot see reason for there being a problem registering again with a different email address. Apparently there is not other option to change your email address. You could apply for a tourist visa that will allow a 60 day stay in the country that can be extended for 30 days. Then after you get married you could apply for a non-o visa at immigration and then a extension of stay based upon marriage That is probably you best option since you are under the age of 50.

Is your visa or your current one year stay from your visa that is ending? You can use your visa to get another one year stay by leaving and re-entering the country before it expires.

They will not issue a 2nd re-entry permit. You cannot have 2 valid re-entry permits in your passport.
