I assume your son is Thai from birth since his mother is Thai. Has his birth been registered here in Thailand or if born in your country at the Thai embassy there? You can apply for a non-o visa and one year extension of stay based upon being the parent of a Thai. You would need 400k baht in a Thai bank on the day you apply for the extension of stay.

It looks like an advert to sell insurance. There is certainly no requirement for insurance for any extension other than a extension of a OA visa entry and that requires 400k baht of in patient care and 40k baht out patient care. -

I have seen no reports of any office doing that. There is no basis for an office doing that since the insurance is only required if a person has entered the country using a OA visa according the the immigration order for extension of stay. -

You could apply for a extension of stay based upon attending a school with your existing stay allowed by the non-o visa you got. A extension for attending school can be for 90 days if attending a informal school such a language one or one year if attending a formal school such as univercity. Hua Hin will accept a email from your embassy stating they will not do the letter. Perhaps call them ask them to send you the email. Others have done it. That might easier than a trip to Bangkok. In Bangkok you would apply at the Muang Thong Thani office.

The bank statement only needs to shows the 400k baht has been in the bank for 2 months prior to the day you apply. Your bank book may be all you will need if it shows the 400k baht in bank for 2 months and has been updated on regular basis. CW migration wants the bank book updated on the day you apply and the bank letter no older the day before.l If needed you can get a bank statement on the day you apply or a few days before that.
