There is no 24 hours. It is by midnight on the date it is cancelled at immigration.

The one stop center will grant 7 days to leave the country.

It is possible to cancel the extension a few days before the termination date shown on a letter and immigration will post date that date.

Not completely correct. The one stop center will grant you the lesser of 7 days or the maximum remaining days on your current extension. If you quit and cancel your work permit 2 days before your extension expires you only get 2 days.

You do have a way to get 7 days. If you apply for an extension, paying 1,900 baht, your application is denied, but you are given 7 days to leave the country.

I know this but it was my understanding I get 7 days to leave the country once my work permit and extension are cancelled.
