After doing many searches on this topic I have still not found a clear answer to this question. 

I arrived into Thailand on a Australian passport and got the standard 30 day visa exemption. 

I then got a 30 day visa extension which I am currently on. 

I really want to do a meditation retreat which crosses past the end of the extension, so I really need a few more days to carry me through. 

I have read that it is possible to extend by an extra 7 days but is this 7 days from date of application or from the end date of my current extension?

I ask this as I am not able to go to immigration on the last day of my current visa as I will be in the retreat, so I will need to apply approx 1-2 weeks prior to the end of the visa end date.

The 7 days to leave the country after the application for an extension is denied starts at the end of your current permit to stay.

A week early should not be a problem. 

as Ujoe wrote, do that.  Years ago I actually did get a 7 day extension, which is similar to the 30 day one can get.  I don't think one can get a simple 7 day extension by itself.  Seems unnecessary since for the same price one gets 30.
