now I'd like to celebrate hummous day as they probably got prepared hummous even in bleedin' Derby in the east midlands these days (1988 in Derby: 'ewww, yew don't really eat garlic do yew???')...but I never seen any around here except in ME restaurants...and I could make it meslf as they gots chickpeas most places, the canned ones at makro are the best...

 

but do they got the other essential ingredient tahina paste? nooooo...and even when ye can find it it costs 400baht fer a small jar...

 

that's bleedin' criminal that is...

 

is there a hummous anthem to be sung on int'l hummous day I wonder...

 

 

with sex with Dianne Keaton and the triumphant marching and singing a bit of hummous with arabic bread would be just right...

afaik foul is usually made from fava beans, in most places in the gulf area at any rate...you can get pureed foul that tastes vaguely like refried beans...substitute arabic bread for tortillas and yer off to the races...

 

hummous on the other hand can be made from most anything so the food gurus tell us; lentil hummous, beetroot hummous, etc...simply got to dose the mixture with garlic and tahina et viola...

I'm too lazy right now to prepare some hummus, which i do in huge quantities and store in the freezer, but i will, soon.

One of my favourite recipes, specially being a long-time vegetarian.

Tasty and healthy.

Yes, of course.

At most more international grocery stores like Villa. But I don't recommend the Australian brand Black Swan. 

Also at Middle Eastern restaurants.

Tahini is very easy to make if you have a blender or food processor. Sesame seeds and olive oil are readily available and cheap here (IME, any vegetable oil will do - so long as it's not strong tasting). No other ingredients are needed.

 

IMHO freshly made tahini makes better Hummus than store bought - no artificial colours or preservatives.

I tried that and it didn't turn out right, believe that I burned the sesame seeds when I tried to toast them...could always try again, I s'pose as it's true that raw sesame seeds are cheap and widely available...

Yes, burning is very easy to do and will ruin the taste. I have learned by my mistakes.

Toast the sesame seeds in small batches in a frying pan, the seeds should barely cover the frying pan, keep stirring or flipping, the colour change is very subtle,  it's the aroma of the sesame oil that is your signal to take them off the heat.

 

Sorry if I am sounding like Gordon F'ing Ramsay.

looks like what one could do is prepare as much tahina as one would need for a 440g can of chick peas/garbanzos (drained and rinsed): toast seeds then put in blender with oil and pulse until a paste is obtained...mash the drained and rinsed beans with a potato masher then add to the blender a bit at a time with garlic, lime juice (could even try vinegar) salt and water to get the right texture and to not overload the blender motor (I used to have a cheap blender graveyard before hummous became widely available in supermarkets)...the volume in the blender bowl will reduce as the ingredients puree and then more can be added...

 

need to have some nice bread to eat it with when it's ready...nothin' worse than nice fresh hummous and no good bread to eat it with...easy to make chapattis beforehand...

btw...when one is able to overcome the tahina limitation for the hummous one might explore the popular tahina sauce dressing (see google) that's very popular in the middle east, put on anything; salads, steamed meats and veges, falafel, shwarma, etc etc...

 

in middle eastern countries one can find tahina in quart containers for about $1.00 in any corner shop and lemons and garlic by the boat load...in Thailand use a suitable substitute fer the lemons and whip up a batch and keep in the fridge and put on most anything...but beware as it is highly addictive...

maybe ye didn't have the right bread...try some in an arab mezze platter with some other stuff in a suitable ME restaurant with a nice freshly made flat bread...hummous on wheat toast is a last resort...in cases where there's no decent bread I'll eat it offa me fingers...

Also goes great as a dip with Pringles, Doritos corn chips, and/or slices of raw carrot, cucumber, Chinese radish, etc.
