I have a valid Non-Imm B visa valid until January, 28th. I'm working for an European School and we're having a few problems since past few days.  So  I won't stay with them longer and they won't apply for a work permit since a I have a valid Visa for 2 more months.

 My question is: As I've got the work visa with this school and I’m not staying with them, will I be able to ever again work in Thailand? Leave the country, come back and get another Non B visa with a different institution in the future perhaps? Because I saw at the Embassy that they require a previous work permit when people are asking for NonB Visa and I won't have one.

More precisely: The permission to stay you received upon entry into Thailand with your non-B visa allows you to apply for a work permit with another employer and to work for this new employer after receiving your work permit.

To clarify: It is the class of non-immigrant visa that qualifies him to apply for a work permit; the permission to stay simply gives him permission to stay.

That is not normally required unless you worked before and had a work permit. You don't need to worry about that.
