I have an SETV, and will be looking to apply for a 30 day extension towards the end of the original 60 days. My question is what would be regarded by immigration to be reasonable reasons for extension, other than “ I just want to extend my holiday for 30 more days”....?

Keep it as simple as possible, most immigration officers can barely read English anyway. I've never written more than just "tourism" and have never been asked for more details.
