When saying thankyou to someone senior or in a formal setting the phrase ขอบพระคุฌครับ is often used. The "pra" is the formal and very polite form of khun. It sounds better to my ear than your "I feel great thanks" However I think the family you mention would be impressed with your phrase in any case.

Sincerly I would say, that is all you need; sincerity. At our stage of knowledge we can not put in all the nuances we can in our own language but the little Thai we have seems not up to the task. If it comes form the heart you are communicating, just be sincere. I am sorry if it sounds patronising but frankly if you got it here it aint you. Don't be put off by me though, this is a good place for 'nuts and bolts' you can learn a lot of good things. I would be careful how you use what you find. ขอบคุณมากมาก with a ไหว้ shouldn't embarrass either side too much, but not worth a thing if you are not kind and considerate in return; just like any other language really.

going with your original sentence style, you could use this:

ผมรู้สึกซาบซึ้งมาก(จริง ๆ)ครับ.

i really appreciate (what you've done)

i'm really moved (by what you've done)

i'm really grateful (for what you've done)

i think this has the strong emotional impact you're looking for.

That said, if you're saying that in the context of politely refusing their offer to sleep in the house, the above sentence is likely to be confusing. I think you'd need to add what it is of which you are appreciative.
