I have the YouTube music app, which works through GoogleHome.

 

Is there any way to set up Bluetooth so it only connects to speakers when I use the YouTube music app, but not for other apps?

I don't know.

But I know it would help if you let us know which device and operating system you use...

If you use Android you could use a program like Tasker to create a profile that when it turns youtube on it turns bluetooth on and when it closes turns Bluetooth off if that helps.
