Secret ingredients to make the gravy tasty are steak sauce and oyster sauce. No longer secret, I guess. I start with about 600 grams of fairly lean beef. A bit of fat is OK, but the cheap fatty cuts tend to have a lot of gristle. Cube the beef smallish. Brown the beef with onions and garlic and salt and pepper. Turn down the heat and scoop out the beef with your slotted spoon. Pour in a cup of water. Stir in sifted flour and a tablespoon of corn starch, also sifted. That is, you're making gravy like your mother showed you. You'll be adding half a cup of water a couple of times as the gravy thickens. In the meantime, you've been boiling your diced potatoes and carrots, just to get a head start on them. Or you can dump them in the stewpot raw if you don't mind simmering a bit longer. Once you've got a couple of inches of gravy, throw everything back in. Add enough water to cover all. Stir. Add frozen peas. Makro sells frozen mixed vegetables with corn, peas & carrots. I throw in one pack of that, which is probably two cups. Note I added peas and carrots twice. That's on purpose, because I only like a little corn in my stew. Fill your stirring spoon with steak sauce. HP, A1, Heinz, any of them will do. Stir it in. Same with oyster sauce, a bit less than the steak sauce. I get Australian grain-fed fillet steak from Big C Extra in Pattaya costing 1500 Baht/kg. That works out about 40-50% more expensive than a fillet steak back in Britain, while most imported food is 100%+ more expensive than buying it back home. To be honest, I prefer the Aussie beef, too, I think it might be the grain finish that gives it a superior taste. I marinate it in beef dripping before frying it in beef fat, then serve it with chips or a salad and crusty fresh bread. The sauce is either my home-made garlic butter, as in the photo, or else I just whip up some beef gravy with red wine and a smidgen of mustard added to it (that's on tonight's menu!). I get a delicious and healthy meal for a bit over 300 baht, some would say it's a luxurious meal even, but I have it every weekend these days. Done apple crumble, golden dumplings and bread and butter pudding. Already cook similar such as upside down pineapple cake and chocolate self saucing pudding. Today I checked the freezer and shelves as the fresh food was 'gone' already and opted for simple but still a party for my tastebuds. Breakfast: Big toast soaked in egg, baked slowly with 40+ cheese. Would eat it, if the bacon was beef ???? Ate like this many times back in my country, we called it "<country> Aardappelschotel" (Potatodish). Many variants and named by the country. Whip two tablespoons of the garlic paste (plenty of uses for the remaining mashed roasted garlic) into the steamed florets adding generous amounts sour cream and parmesan cheese and black pepper/salt to taste. I just made the dough I cup of warm water In it mix 1 teaspoon of dry yeast and two teaspoons of sugar ( food for the yeast) 1/2 teaspoon of salt 3 cups of all purpose flour ( first mix one cup for a minute, and then add the other two and mix for a few minutes. Take dough out of bowl and divide in four with a knife. Shape the four parts into bowls and place in a Tupperware or bowl and cover . let sit overnight for best results . but could use in a couple of hrs of rising. The bread I take out every 45 minuted and fold over s few time . I do that four times and it is ready. I have already made the sauce (crushed tomatoes , garlic, onions, parsley , salt and pepper.)
