Having worked in a few dairies in my time. There are two main processes pasteurization and UHT which is a form of  pasteurization.

 

The milk (from cows) is heated and kept at that temperature for a prescribed amount of time and then cooled. This kills all the nasty bugs.  Modern pasteurization is know as HTST ( high temperature short time) this is done in commercial dairies to facilitate faster throughput. 

UHT (Ultra high temperature) is the other main process which uses higher temperatures for a shorter time. UHT milk is mainly packed in aseptic packaging ( waxed paper boxes) like say Tetrapak. UHT can have a slightly burnt taste but keeps longer if unopened.

 

So what we buy in shops depends on what process the dairy uses.  In theory there is no better of worse in either sterilizing system. The only thing to look for is the fat content (cream). Like the old UK silver top, red top or gold top bottles. fat content is usually reflected in the price.

 

There are rumoured to be dairies in Asia that import dried milk powder and reconstitute it into liquid milk. I don't know who they are.

All of them what I understand - they don't have proper diary in this old maid.
