– Can I contribute to French magazines (I mean writing articles, features...) from Thailand or write books, be paid in France, without getting a work permit in Thailand ?

– If not, is one of press companies for which I work as a contibutor can accredit me in a way I can get a Non-Imm visa ? For example class M ?

If one of your clients will assist you obtain an M visa, I'd take that option. Join the FCC in Bangkok. You never know where it might lead you if you associate with others of the media.
