I'm going to extend my Non-B visa - which was granted for 3 months - in July.

At the present time I"m not planning to leave the country in the next 9 months, so I'm

thinking about to apply for a single entry only.

But in case I have to leave Thailand say in October, is it possible to change the single entry visa later on in a re-entry?

Believe you are misunderstanding the extension of stay process. If you extend your stay you are not allowed to exit Thailand at all without buying an extra re-entry permit and using that for your entry after exit - this is not a visa where you have single or multi entry types. In other words if you do not plan to travel there is no need to pay the extra 1,000 baht for a single re-entry permit. All you pay is the normal extension of stay (TM.7) fee of 1,900 baht.

If you later decide to travel you can then buy a single re-entry permit prior to trip for 1,000 baht or a multi (if you decide to make a lot of trips) at 3,800 baht.
