Visa help - New to the Game - Tourist

Hey hey, 

I have been looking online and in this Forum for quite some time now and I need help with my Visa and what to do next.

German citizen, under 50 years old.

I came here on a Tourist E-Visa, then I extended one time and after that, I got the 60-Day Covid extension.

I was wondering now, what I can do to stay in Thailand. I have also talked to some agencies, but they want to do some volunteer or Business Visa. I think that's high risk.

I have a new passport, it only has the stamps ( Tourist E-Visa, 30-day extension, 60day covid).

Last year I had a passport ( this passport was returned to the german gov.) where I got the Tourist Visa, extended 1 time and then got the ED Visa. I was thinking to do it again, but my current visa would expire and they would not have enough time to do all the registrations. 
So I am already in the System, I assume.

 

Can I go to Korea ( fly from bkk to Seoul and back), stay a week, and return to Thailand? Do I have to apply again for a Tourist Visa, or can I also do that in Thailand? 

Since my Covid extension would expire, I dont think I need a reentry permit, but not sure.

Thank you for your fast reply. So you would recommend going to a neighboring country via Land and come back the same day. I assume these are the “border hopping or border runs” ? 
Getting a stamp when leaving and getting a new one when coming in. 
 I could make this a weekend trip with my girlfriend ( she is thai) might be fun and a new experience.
Is there an easier way to do this via air?

Saigon is great place.

You could obtain tourist visa there and also make holiday out of it.

Thai do not require visa and also German national same. 

Just check visa exempt for Vietnam back in place .

OP, how long do you envisage staying in Thailand, and how well set are you financially? If you may want to stay for a long time (many months or even years) the advice I would give is completely different than if you just want two or three more months.
