Hmmmm - not sure about that. Natto is a traditional fermented soy food also known as Itohiki-natto. It originated in the northern part of Japan about 1000 years ago. It is one of the few products in which bacteria predominate during fermentation. Properly prepared natto has a slimy appearance, sweet taste, and a characteristic aroma. One source who recently tasted natto for the first time described it as initially nutty followed by a sharp funk—almost like extremely ripe blue cheese.
